How macOS actually works
The right format for a shared drive is a settled question — exFAT — but Disk Utility hides a second choice, the partition scheme, that determines whether the drive behaves everywhere or only mostly.

exFAT wins by elimination: FAT32's 4 GB per-file ceiling ends the discussion for video and disk images. exFAT's real weakness is no journaling — an interrupted write can corrupt more than the file being written — so shared drives get ejected properly, every time.
without it you format the volume but not the device, and the old partition scheme survives.
GUID is correct for every drive that will meet a modern OS. The older Master Boot Record scheme survives on drives formatted by cameras and old utilities, and it is why some drives mount oddly or resist reformatting until Show All Devices reveals what is actually on the device.
Confirm both directions once — write a file from each OS — before trusting the drive with a project. And note what exFAT costs on the Mac side beyond journaling: no APFS snapshots, no Time Machine (which requires APFS), and Spotlight indexes it more slowly than native volumes. A shared drive is for transport and shared archives, not for backups.
exFAT, unless the stick must work in an old car stereo or camera that only speaks FAT32. The 4 GB file limit makes FAT32 otherwise obsolete.
